Camping Recipe: Breakfast Made Easy (and Delicious!)

Get the day started strong with the most important meal of the day! Take a look at our basic quiche recipe and then add your favorite fillings for a hearty start. This is one camping recipe you’ll always want to have on hand – and a piping hot slice of quiche is perfect with a hot cup of coffee with the steam curling up on a chilly morning.

Basic Quiche Recipe

For every quiche, you’ll need:

  • One frozen 9” pie crust
  • 6 eggs
  • 1/3 cup sour cream
  • 2/3 cup shredded cheese (Use cheeses you know you like: shredded cheddar, mozzarella, pepper jack, etc.)

Suggested fillings:

  • Ham & cheese quiche: add 2/3 cup fully cooked diced ham to egg and sour cream mixture with the cheese of your choice  
  • Smoky meathouse: cook and crumble ½ lb mild Italian sausage, 4 slices of bacon, and ½ cup fully cooked diced ham. Add to egg, cheese, and sour cream mixture.
  • Veggie quiche: Dice and saute the following in a small drizzle of olive oil: ½ onion, 1 Roma tomato, 4 baby bella mushrooms, and 4 baby sweet bell peppers. Once the onions are tender and translucent, add a 1 cup frozen chopped spinach. Heat through just until spinach is wilted, and then add to egg, sour cream, and cheese mixture.

I often whisk up the quiche mixture the night before and pour it into a gallon size food storage bag. Then in the morning, I’ll pour it straight into the pie crust and bake it.

Directions:

  • Crack eggs into a medium mixing bowl and whisk in sour cream, beating until smooth. There may be a few little lumps of sour cream; that’s perfectly okay.
  • Add in cheese and other fillings of your choice as suggested above and stir gently to combine.
  • Pour the egg mixture into a pie crust and bake at 350 degrees for 30-40 minutes or until golden brown on top and a sharp knife inserted comes out clean.

If you love the idea of fancy eggs but don’t want the crust of a quiche, dress up your scrambled eggs with these same fillings! Whisk and mix the mixtures as suggested above – or make your own! – and pour into a hot, oiled skillet. Scrape rapidly and remove from heat once eggs are cooked through. Since scrambled eggs cook very quickly, it’s very important to make sure any meats you add are fully cooked ahead of time.
